Kinky Kale Salad

Kale gets kinky punishing naughty apple, you know why!

Kinky Kale Salad

2 large sweet potatoes peeled and diced

1 cup of pearl onions, peeled

3 Tablespoons olive oil

1 teaspoon kosher salt

1 crisp apple, sliced thin into half moons

1 bag baby kale

1/4 cup pomegranate seeds

Dressing

2 Tablespoons pomegranate molasses

2 Tablespoons apple cider vinegar

1 teaspoon dijon mustard

3 Tablespoons extra virgin olive oil

Kosher salt to taste

Make the dressing by combining all ingredients except salt and whisk or shake vigorously.

Scatter potatoes and onion on baking sheet and drizzle with oil and salt.  Roast at 425 degrees until soft and starting to brown, approximately 35 minutes.  Cool slightly and add kale and apples. Gently toss with dressing and add pomegranate and salt to taste.
