Any suggestions for how to cook Portabella mushrooms other than the usual?

Vicky: Portabella mushrooms have a meaty texture so they’re a great substitute for a burger, or chicken breast. I like them grilled with a little pesto and tomato on top, or brushed with Worchester and chopped tomato. Poke is a fresh, flavourful Hawaiian raw fish salad (similar to ceviche) but can be made vegan with tofu. The ponzu sauce is bracingly acidic with a throaty salinity evocative of soy. Crisp raw veg adds crunch and brown rice is cozily nutty.

2 cups cooked brown rice

1 brick tofu extra firm or pressed

2 scallions, sliced thinly at a diagonal

1 teaspoon toasted sesame seeds
