Blistered Tomatoes

Tangy, sweet and acidic bursts that lightly scold your tongue.

Blistered Cherry Tomatoes

2 pints assorted cherry tomatoes

1 tablespoon extra virgin olive oil

Fresh ground black pepper

Himalayan pink sea salt to taste

On a parchment lined baking pan drizzle tomatoes with olive oil. Massage with your hands to make sure each tomato is coated and season with Himalayan pink sea salt and fresh cracked pepper. Roast at 425° 5 to 10 minutes. You will know when

Jalapeño Artichoke Dip

Old school throwback dip that is still Yum! Yum! Yum! Creamy, cheesy, spicy, savoury – wow!

Jalapeño Artichoke Dip

1/2 cup mayo

1/2 cup sour cream

1/2 cup asiago cheese grated

1/2 cup Parmesan cheese grated

1 tin artichoke hearts drained and  diced

Braised Mushroom Recipe

Meaty and savoury, sumptuous mushroom. Terribly hearty!!

Braised Mushrooms

2 pounds of sliced assorted mushrooms

3 tablespoons extra virgin olive oil (I like to use garlic flavoured) or

1 clove garlic minced

One bunch green onion diced

One large red pepper roasted

1 sprig fresh thyme

1/2 cup vegetable broth

1/2 teaspoon soy sauce

4 – 6 cups spinach

4 cups carrots cut into 2″ chunks
