1 Sweet Potato scrubbed or peeled

Ok. This is NOT spaghetti, but it is divinely bland and redolent of every flavour it bathes in.

Mexican Spaghetti Squash

1/2 spaghetti squash per person

1/3 cup favorite salsa

1 tablespoon chopped green or red onion

1/4 cup each black beans, corn, diced tomato

Minced jalapeño to taste

Pepper jack or vegan melting cheese

Cilantro to taste

1/4 avocado diced

1/4 lime juiced

Sour cream or almond cream to top

Cut squash in half lengthwise and scrape

Shivery and ebullient – ice cream for breakfast? And oh! So pretty!

Smoothie Bowl

3 cups frozen mixed berries

1 scoop Vega One vanilla protein powder (or your favourite)

1 lime juiced

1 orange juiced

1/2 cup water, almond milk,coconut milk or pomegranate juice

Blitz all together in a blender, food processor, vita mix, or with your immersion blender. Consistency should be thick like pudding. Add more liquid if necessary.
